This wine stands as testament to five-centuries of heritage.This journey of over half a millenia has led to this very wine, which we proudly claim as our finest and most prestigious vintage to date.

Variety: Shiraz [90%] and Cabernet Sauvignon [10%]

 

Tasting notes: The sheer intensity of this wine in its youth tends to obscure the multilayered collection of herbs and spices that track the unstoppable expansion of fruit on the palate. This densely purple wine of powerful dark fruit is complemented by velvety texture and a complex and lingering finish.

 

Vinification: This parcel of Barossa Valley Shiraz was handpicked at night and destemmed into small 2 tonnes open top fermenters. The fruit was then held at 10-15 degrees for 5 days before allowing to warm and start fermentation. After 20 days cool fermentation on skins and hand plunged daily the wines were pressed to 40% new, 60% seasoned French and American oak Hogsheads where they matured for 24 months.

 

2015 Vintage: An outstanding year for Barossa’s red varieties with grapes showing strong colours and rich flavours after 2 consecutive years of small yielding.
The majority of canopies held up well through the warm days of February. No heatwave conditions this year, which was a relief!
